Head Chef Axel Curtet-Latreille has introduced a fresh line up that celebrates the best of Aotearoa’s seasonal produce. Think Ora King salmon brightened with kaffir lime, free farm pork cheek with silky miso kumara, Greenstone Creek beef fillet paired with chickpea panisse, and Hawke’s Bay lamb rump finished with crisp polenta. It’s refined but still welcoming, the sort of food that makes you slow down a little.
Desserts follow the same sense of place. Into the Wetland takes inspiration from the native flora behind Tantalus, giving a Kiwi twist to a Black Forest classic with cherry and chocolate layered alongside kawakawa and horopito gathered on the estate. It’s a sweet nod to the land itself.

Axel sums it up simply. “Our cuisine draws inspiration from the seasons, our Estate, Waiheke surroundings and selected artisanal farmers and small producers from across Aotearoa. The top priorities for me are that produce is organically grown and ethically and sustainably sourced.”

A setting you’ll want to linger in
The estate restaurant is one of those rare spaces that manages to be both grand and completely comfortable. Spanish inspired architecture, warm textures, sunlight pouring through and views of vines, gardens and wetlands all working together. There are courtyards, lounges, a bright tasting room, a mezzanine peeking into the craft brewery and a tucked away private dining room wrapped in hand painted tiles and old vine chandeliers. Every corner has a little magic to it.
Waiheke’s climate gives the vineyards a natural advantage too. Dry, warm summers and protective ridgelines create ideal conditions for the Burgundy, Bordeaux and Rhône clones that flourish here. Sustainability shapes everything behind the scenes, from dry farming and water recycling to ongoing restoration of native habitats across the estate.

Summer Lawn Sessions return
If a sunny afternoon of music, rosé and good company sounds like your ideal summer blueprint, mark your calendar. The Summer Lawn Sessions return to Tantalus on Sunday 28 December, running from 4.30 until sunset. DJ Hev and DJ Alisha will be keeping the vibe bright and breezy while the Alibi Brewer’s Lounge serves up relaxed bites and the rosé flows.
It’s free to attend, the lawn is spacious, and golden hour hits different in the Onetangi Valley. Last year’s event became a bit of a cult favourite so expect a mix of locals, island wanderers and anyone chasing that soft, summery feeling.

Why now is the perfect time to visit
Summer brings out the best in Tantalus. The vines are lush, the wetlands hum with life and the restaurant’s seasonal shift is a great excuse to book a long lunch. You can wander from tastings to courtyards to a sunny spot on the lawn, glass in hand and easily lose track of time in the nicest way.
